Weekly Meal Plan #8 September 19, 2024
Creamy Turkey & Veg Soup + Pizza Pasta Skillet + Smoky Chicken Bowls with Cucumber Mango Relish + Loaded Chicken Bacon Ranch Potatoes

I hope today finds you well and living life to its fullest!
It’s almost Fall so we’ve got a soup this week. You can either make the entire soup on meal prep day or just cook the turkey and cut up the veggies.
And while we tried a little something different last week, I went back to the ground meat/chicken breast format for this week. The two chicken recipes use the same rub, so you can cook all the chicken at once. For the smoky chicken bowls, you want small chicken breasts if you want to leave them whole so I’ve included a link to my video showing how to cut large chicken breasts into smaller cutlets.
As always, meal prep is not required to make your meal plans, but my component meal prep system allows the weeknight meal creation so easy and usually only about 15-20 minutes. If you haven’t tried it, set aside an hour or two this weekend and do as many of the Meal Prep steps as you can do.

Ground Meat:
Creamy Turkey and Vegetable Soup – A lovely use for the summer/fall vegetables that are prevalent at farmers markets. Ground turkey, veggies and smoky bacon in a creamy base.
Pizza Zucchini Skillet – Homemade Italian Turkey Sausage, pepperoni, pasta, zucchini, peppers, and onions covered with a blanket of cheese (dairy free option).
Chicken Breast:
Smoky Chicken Bowls with Cucumber Mango Relish – BBQ spice rubbed chicken breasts over coleslaw with a fresh cucumber and mango relish with a smoky chipotle drizzle.
Loaded Chicken Bacon Ranch Potatoes – Baked potatoes hollowed and re-stuffed with ranch mashed potatoes and topped with BBQ spice rubbed chicken, bacon, cheese and more Ranch.
