In-n-Out Animal Style Potatoes + Red Chile Beef Enchiladas + Jerk Chicken Taco Bowls + Southwestern Chicken Soup
What’s For Dinner This Week
Ground Beef:
In-n-Out Animal Style Potatoes – IYKYK, if you don’t, trust me…this is good! Ground beef, mustard caramelized onions, lettuce, tomatoes and pickles piled onto halved potatoes. Serve with carrot and celery sticks if you want more veggies.
Red Chile Beef Enchiladas with Cucumber, Avocado and Lime Salad. – These enchiladas are a fave and come together fast if you’ve meal prepped the beef. The salad is storebought lettuce mix, cucumbers, avocado and lime dressing. Optional: Pickled Red Onion.
Chicken Breast:
Jerk Chicken Taco Bowls – Jamaican Jerk Spiced chicken and mango pico de gallo over rice (your choice of cauliflower or regular) will bring a little of the tropics to your winter day.
Southwestern Chicken Soup – Similar to tortilla soup but with a red chile base for a smoky and slightly spicy flavor. All the toppings, too.
