Recipes: Philly Cheesesteak Bowls + Lemon Herb Chicken & Zucchini + Thai Basil Beef + Cucumber Chicken Salad with Shopping List & Meal Prep Guide
Hi friends.
It’s the last week of August and still hot here in Texas. Because of that I’m including grilled items and a salad again. And you’re going to notice some overlap in each pair of recipes. This should make meals go super fast for you especially if you use the meal prep guide and prep the few components at the beginning of the week.
Meal Prep Tip: If you can’t do all of it on one night, at least cook all the beef the night you make the first beef recipe and do the same with chicken. This one step will get you ahead. But I’ve also found if I simply prep extra veggies when I’m already in the mode, it gives me extra minutes later on in the week.
Note: if grilling is not happening where you are, feel free to use an indoor grill, broiler or simply cook the chicken in a skillet.

Ground Meat:
Philly Cheesesteak Skillet – Ground beef and potatoes with sliced peppers and onions in a savory sauce topped with melty cheese and served over crispy potatoes. Faster and easier than the original but just as good!
Thai Basil Beef – Ground beef with lots of basil, peppers, onions and a spicy-sweet sauce over rice (Jasmine or cauliflower, your choice)
Chicken Breast:
Grilled chicken with Parmesan Zucchini – Lemon Herb grilled chicken with the easiest and tastiest zucchini side dish. You’re going to grill all the chicken at one time for both recipes. Easy-Peasy.
Grilled Chicken and Cucumber Salad – This is the most refreshing salad if you’re still having major heat like we are here in Texas. Cucumbers, fresh basil, crunchy almonds and a lemony vinaigrette.
