This week’s meal plans:

Ground Meat:

  • Philly Cheesesteak Skillet – Ground beef and potatoes with sliced peppers and onions in a savory sauce topped with melty cheese and served over crispy potatoes. Faster and easier than the original but just as good!

  • Thai Basil Beef – Ground beef with lots of basil, peppers, onions and a spicy-sweet sauce over rice (Jasmine or cauliflower,  your choice)

Chicken Breast:

  • Grilled chicken with Parmesan Zucchini  – Lemon Herb grilled chicken with the easiest and tastiest zucchini side dish. You’re going to grill all the chicken at one time for both recipes. Easy-Peasy.

  • Grilled Chicken and Cucumber Salad – This is the most refreshing salad if you’re still having major heat like we are here in Texas. Cucumbers, fresh basil, crunchy almonds and a lemony vinaigrette.
