Ground Meat:
Turkey Zucchini Enchilada Skillet – Using thinly sliced zucchini instead of tortillas, this is a great way to use one of the most prolific and cheapest summer veggies.
Turkey Gyro Bowl – Greek spiced ground turkey over rice with all the Gyro toppings.
Chicken Breast:
BBQ Chicken Lettuce Wraps with Japanese Potato Salad – BBQ Chicken in lettuce Cups with a veggie packed creamy potato salad. Not a mayo lover? There’s a variation for you.
Buffalo Chicken & Bacon Salad – Buffalo sauced chicken, bacon, cucumbers, carrots and Romaine topped off with Ranch and optional blue cheese (or use your favorite dairy free or regular cheese instead).
