Sweet Thai Chili Burgers with Spicy Lime Quick Pickles + Turkey Shawarma Stuffed Peppers + Chimichurri Chicken and Veggie Quinoa Salad + Red Chile Chicken Enchiladas
What’s For Dinner This Week
Ground Meat (Can sub any other):
Sweet Thai Chili Burgers – Ground turkey burgers with all the Thai flavors topped with sweet slaw, Thai chili mayo and quick spicy lime pickles.
Shawarma Stuffed Pepper – Ground turkey seasoned with Gyro spices and quinoa stuffed into sweet bell peppers. No need for a side, it’s all inclusive.
Chicken Breast:
Chimichurri Chicken and Veggie Quinoa Salad – Another take along friendly salad with chicken, chimichurri sauce (go ahead and double this to serve with everything!), summer veggies and quinoa. (I’m teaching you the perfect way to make it.)
Red Chicken Enchiladas– Easy homemade enchilada sauce (storebought alternative) and shredded chicken make restaurant style enchiladas with Avocado and Lime Cucumber Salad.
