Banh Mi Turkey Meatball Bowls + Jerk Turkey Burgers with Mango Slaw + Cobb Chicken Salad + Chicken Verde Tacos
What’s For Dinner This Week
Ground Meat of your choice:
Banh Mi Turkey Meatballs – All the goodness of a Bahn Mi without the baguette. Herb filled turkey meatballs with pickled veggies, rice and Sriracha mayo.
Jerk Turkey Burgers with Mango Slaw – Spiced turkey burgers topped with Mango Slaw. Serve with your favorite sweet potato or regular potato chips or Alexia Organic fries (my preferred brand since there’s no seed oils).
Chicken Breast:
Chicken Verde Tacos – Super easy Taco Tuesday riff. Green chile salsa mixed with shredded chicken served on corn or Siete tortillas with all the usual toppings.
Cobb Chicken Salad – Mixed greens with cubed chicken, bacon, avocado, boiled eggs, cheese (I prefer the classic blue cheese) and baby tomatoes. The included pantry vinaigrette can be made to take camping, to your beach getaway or simply to have at the ready when you need it without refrigeration.
