What’s For Dinner This Week

Shrimp (Sub Chicken or White Fish for Shrimp if allergy)

  • Easy Oven Roasted Shrimp Tacos – Shrimp, pineapple slaw and an easy chipotle may fill corn tortillas for a fast and fun holiday meal.

  • Honey Garlic Shrimp and Veggies – Shrimp with sugar snap peas and carrots in a delicious sweet & spicy sauce over rice.

Pork Chops

  • Coffee Rubbed Pork Chops – This is a simpler version of my Double Espresso Pork Chops. Skipping the espresso apple cider brine, you simply rub the pork chops with a few spices and ground coffee to make a flavorful crust when you cook them on your stovetop. Veggies roast while chops cook making this a special holiday dinner but easy enough for a weeknight.

  • Barbecue Pork Sandwiches – Chopped up leftover pork chops combined with barbecue served on buns with an easy pineapple slaw (also used on Shrimp Tacos.)

Notes For This Week

This week’s proteins are thick cut pork chops and peeled and deveined shrimp. Both are quick to cook.

  1. The pork chops will be dry rubbed and you can do this up to 24 hours before cooking them. You will cook them all at the same time.

  2. The Pineapple Slaw is used in two recipes so making it ahead will greatly help with quick holiday week meals.
