Pan Asian Beef Bowls + Meatball Parm Subs and Oven Fries + Fajita Style Grilled Chicken and Veggies with Cilantro Rice + Lemon Herb Chicken Alfredo with Pasta and Veggies
What’s For Dinner This Week
Ground Meat of your choice:
Pan Asian Bowls - Ground meat sauteed with tons of veggies and teriyaki sauce over rice with quick pickled veggies (like 5 minutes quick!) and crunchy pan roasted nut mix.
Meatball Parm Subs and Parmesan Pepper Oven Fries – These meatballs can be stuffed into hot dog or sub rolls for a traditional sandwich or into zucchini for a low carb dinner. Ready to heat fries (Alexia organic brand for the cleanest version) dressed up with parmesan and black pepper make for a delicious side.
Chicken Breast (two different rubs, one night of grilling, see notes**):
Fajita Style Grilled Chicken and Veggies – There’s a legendary fajita place here in Texas that serves a sidecar of garlic butter to pour over the top. These mimic that without all the fluff – just chicken, veggies, rice and that buttery nectar. Feel free to go all out with tortillas, salsa, sour cream, guac and cheese if you want, though.
Blackened Chicken Alfredo with Pasta & Veggies – The remaining chicken and veggies marinated with Blackened Spice, tossed with penne pasta and a super easy Alfredo sauce.
