What’s For Dinner This Week

Chicken Breast or leftover turkey:

  • Buffalo Chicken Stuffed Potatoes – Buffalo sauced shredded chicken over baked potatoes with a side of baby carrots, celery sticks and Ranch.

  • Broccoli Chicken Bake – Broccoli, chicken and cauliflower rice (or regular rice if you prefer) make this a perfectly balanced meal. Use my GF DF Cream of Chicken Soup recipe or buy your favorite organic, real food brand. Pacific Brand has a good one.

Ground beef or turkey:

  • Taco Salad - Layer lettuce, reheated Mexican seasoned ground beef, tomatoes, cheese, green onions, salsa and sour cream

  • Mediterranean Turkey Bowls - Layer hummus with cooked and reheated ground beef, sliced cucumbers, shredded carrots, and halved cherry tomatoes tossed with salt, pepper, 1/3 cup EVOO and juice of a lemon
