Zucchini Caprese + Greek Gyro Style Wraps + Honey Mustard Chicken and Veggies + Spring Pesto Pasta Salad
What’s For Dinner This Week
Ground Beef (or your preference of ground meat):
Zucchini Caprese with Wilted Spinach Salad – These zucchini boats are so taste with a meat mixture resembling meatballs and served alongside a wilted spinach salad.
Greek Style Gyro Wraps – All the flavors of a Greek Gyro without having to spit cook a large cut of meat. Use your favorite flatbread or tortillas. Of course lettuce wraps are always welcome if you’re keeping carbs low.
Chicken Breast:
Honey Mustard Chicken and Veggies – This delicious combo is super kid friendly. Feel free to serve the veggies separate for the picky ones. You could also add some potatoes if you like.
Spring Veggie and Pesto Pasta Salad – So much green!! Pesto, arugula and asparagus team up with chicken for the healthiest pasta salad ever. If you’re limiting carbs (because…swimsuits?) use thickly sliced zucchini instead.
