Fall Veggie & Sausage Sheet Pan Dinner + Sausage and Veggie Soup + Wine Country Chili + My Mom's Crazy Spaghetti

So many comfort foods, it’s like a big thick blanket for your belly! Even so, there’s still lots of veggies and whole foods. See notes below about sausage, though or you could quickly venture off the path.
A Few Notes:
We’re using fully cooked sausages this week for two recipes which makes for quick cooking and little prep but some brands are not really made from whole foods.
Brands I recommend: Aidell’s, Amylu’s, HEB or Central Market Organics Brands (in Texas), or Whole Foods.
With any brand, organic chicken, turkey or pork should be the first ingredient.
And definitely don’t think about buying if you see any of these:

The Chili is called “Wine Country Chili” because we developed it using a secret ingredient that makes it go perfectly with a Cabernet Sauvignon from Rutherford in Napa Valley when we lived there. It goes great with beer, cocktails, or any red wine, but wines from that region are special with it because of the secret ingredient. Can you guess what it is? (Reply with the correct guess and I will give you a free month!)
Chili and soup can both be made completely ahead if you choose to.
The Spaghetti recipe has alternatives if you avoid grains or are eating Keto/low carb.
This week’s meal plans
Fully Cooked Italian Sausage
Fall Veggie and Sausage Sheet Pan Dinner – If you’ve prepped the veggies ahead, this is a fast dinner and you can multi-task while it’s roasting.
Sausage and Vegetable Soup – This is a quick soup since the sausage is fully cooked and everything is sort of dump and go.
Ground Meat
Wine Country Chili (Three Ways) – My chili recipe with a secret ingredient! Served over rice with all the fixings and a few green things like carrots and celery on the side.
My Mom’s Crazy Spaghetti – I grew up eating this. It’s so good and not your regular spaghetti dish.
