Taco Turkey Burgers with Sweet Potato Fries + Ground Turkey and Green Bean Stir Fry + Mediterranean Chicken Bowls + Green Chile Chicken Quesadillas with Mexican Salad
What’s For Dinner This Week
Ground Turkey (or your preference of ground meat):
Taco Turkey Burgers with Sweet Potato Fries– Taco seasoned turkey burgers with cheese, guac and salsa mayo. Serve on regular or GF bun or make into a lettuce wrap or salad. Maybe a new Taco Tuesday riff?
Turkey and Green Bean Stir Fry – This stir fry has become a favorite in our house. Using ground meat cuts out the step of slicing meat so it comes together very quickly. Serve over rice or cauliflower rice.
Chicken Breast:
Mediterranean Chicken Power Bowls – Mediterranean spice blend seasoned chicken with roasted potatoes and veggies over mixed greens with Tzaziki (cucumber yogurt sauce)
Green Chile Chicken Quesadillas with Simple Mexican Salad – The ultimate Texas comfort food. Use regular, grain free or gluten free tortillas (our faves are Siete Cassava and Coconut tortillas) and your favorite cheese (we use either raw milk cheddar or Violife dairy free). The salad is like what you get on the side at many TexMex restaurants with the addition of Jalapeno ranch to make it less of a garnish and more of a true salad.
