Classic Pot Roast with Roasted Potatoes & Brussels Sprouts + Pot Roast Pasta + Italian Wedding Soup + Buffalo Chicken Meatball Subs

Texas is weird! As I’m writing this (11 hours before sending it out mind you) it’s 90 degrees!!! It’s very hard to believe in 10 days we will be into November and the holiday season full on, yet we’re still sweating down here! 🥵
This week we’re using Chuck Roast and Ground Chicken for the recipes. Taking time on Sunday or before work on Monday to prep and cook the chuck roast and mix and cook the meatballs will make this week’s meals a breeze. The roast is the star of two meal plans and it takes awhile even in the Instant Pot. The ground chicken is being made into one big batch of meatballs. But you will use them with different flavors so no one will know they’re exactly the same recipe.

This week’s meal plans:
Chuck Roast:
Classic Pot Roast with Roasted Potatoes & Brussels Sprouts – The classic style with carrots and onions. Freshly roasted potatoes and brussels sprouts up the game a bit. Feel free to sub another veggie for sprouts if you don’t want them.
Pot Roast Pasta – This may seem strange, but it’s actually very close to a classic beef and pasta dish served in the Provence region of France.
Ground Chicken or Turkey:
Italian Wedding Soup – Tiny meatballs, spinach, and white beans in a super flavorful creamy broth. It’s like a mashup of classic chicken soup & Zuppa Toscana.
Buffalo Chicken Meatball Subs – Buffalo sauced meatballs on baguette (reg or GF), baked potato or squash topped with Ranch slaw. Sub a baked russet or sweet potato for baguette.
