Beef and Bacon Sloppy Joes with Sweet and Sour Slaw + Loaded Meatzza with Lemony Side Salad + Chicken Enchilada Stuffed Peppers + Loaded Romaine Wedge Salad
What’s For Dinner This Week
Ground Beef (or your preference of ground meat):
Bacon Sloppy Joes with Sweet and Sour Slaw– I saw this at a restaurant and couldn’t resist recreating it. It’s sort of a mashup of sloppy joe and a barbecue sandwich. Feel free to use turkey, chicken or beef as they will all be delicious with the bacon added. For grain free, use a baked potato or sweet potato instead of bun.
Loaded Meatzza with Lemony Arugula Salad – This is the ultimate meat-lovers’ pizza as the crust is even made out of meat. You can load it up with all the toppings you normally eat on pizza, or just use lots of pepperoni and cheese (regular or dairy free). Don’t skip the salad as it offsets the richness of the Meatzza.
Chicken Breast:
Chicken Enchilada Stuffed Peppers – All the goodness of Red chile enchiladas in a pepper. If you don’t like stuffed peppers, feel free to use another veggie or use only ½ cup of enchilada sauce in the filling and fill tortillas then top with remaining enchilada sauce and more cheese.
Loaded Wedge Salad – Sort of like a Cobb had a baby with a Wedge. It’s based on a salad I had in San Francisco that was so good, I haven’t stopped thinking about it. If you don’t like cutting up a wedge, just make a chopped salad.
