Somewhat Traditional Shepherd’s Pie + Panamanian Beef and Coconut Rice Bowls + Garlic Butter Chicken and Veggie Sheet Pan Dinner + Simplified Pad Thai
What’s For Dinner This Week
Ground Beef (or your preference of ground meat):
Somewhat Traditional Shepherd’s Pie – Using ground beef instead of lamb, this traditional comfort food is always good especially while we’re still having a few chilly days. You can definitely use ground turkey if you prefer.
Panamanian Beef and Coconut Rice – This is like a less spicy chili. It has green olives in it which is traditional, but you can totally leave them out. The coconut rice is TOTALLY delish, but you can also make this with cauliflower rice instead of regular rice. NOTE for those doing meal prep: Follow the directions in the actual recipe this week, not the regular meal prep rice recipe. You will be using coconut milk instead of water.
Chicken Breast:
Garlic Butter Chicken and Veggie Sheet Pan Dinner – This super easy dinner takes a basic dinner up to restaurant quality. The quick garlic butter mixture (and rolling technique) is one you will want to make in batches and keep in freezer.
Simplified Chicken Pad Thai – I learned this not-quite-so authentic version of Pad Thai from a a sweet Thai lady in California. It doesn’t use all the unusual ingredients most of us don’t keep in stock, but instead very common ingredients to make the almost drinkable sauce. I like to use the Shirataki noodles or cabbage in place of rice noodles for less carbs but you can use the fettucine sized Pad Thai noodles (AKA Rice Sticks) that you find in the Asian food area.
