Pesto Bacon Turkey Burgers + Turkey Chili Stuffed Potatoes + Chicken Salad Salad + Chicken Enchiladas Verde
What’s For Dinner This Week
Ground Turkey (or your preference of ground meat):
Pesto Turkey Burgers – Turkey patties with pesto and salty feta topped with Bacon, pesto mayo, tomato and arugula. Use gluten free buns for the classic burger. Or sub iceberg lettuce leaves for lettuce wrapped burger. My favorite way is to make a bowl and top with the burger and mayo.
Turkey Chili Stuffed Potatoes – My chili recipe has some secret ingredients that make it uber flavorful! Stuff it into baked sweet or russet potatoes and top with cheese, green onions and sour cream or ranch. Serve with carrot, cucumber and/or celery sticks and extra ranch.
Chicken Breast:
Chicken Enchiladas Verde – Creamy chicken stuffed tortillas with the easiest salsa verde recipe (3 ingredients in a blender!) Served with a simple slaw and avocado slices.
Chicken Salad Salad – It’s not a typo. It’s classic chicken salad with pecans and cranberries on top of a mixed green salad with apple slices and an easy balsamic dressing. One of our very favorite salads!
