Super Quick Ground Beef and Veggie Stir Fry + Retro Taco Salad + Pepperoncini Chicken Tacos + Chicken Pot Pie Soup
What’s For Dinner This Week
Ground Beef (or your preference of ground meat):
Super Quick Ground Beef and Veggie Beef Stir Fry – With quick cooking ground beef and no-prep veggies, this comes together easily in 15 minutes. Serve with either cauliflower rice or regular rice.
Retro Taco Salad – Back from the 80’s, this is the classic with taco meat, beans, tomatoes, green onions, cheese (regular or dairy free), black olives (optional), tortilla chips (regular or Siete grain free) and either Paleoized “Catalina” dressing (that sweet and tangy dressing that always tasted weirdly good on this salad) or your favorite salsa.
Chicken Breast:
Pepperoncini Chicken Tacos – A mash up of Italian Beef (have you watched Bear on Hulu?) and Shredded chicken tacos.
Chicken Pot Pie Soup – You can serve this as is, or with my grain free biscuit recipe below. (Make biscuits before you start the soup, or make on your meal prep day.) With or without a bread element, it’s delicious and hearty. Perfect for this shoulder season where it’s winter one day and spring the next.
