This week’s meal plans

I know we’re all into the holiday times now, but this week, I wanted to have a little more color than we sometimes get in November. After all, Thanksgiving food can be pretty brown. I guess, thinking about it, it does match nature which is kind of cool.

Anyway…I think you’re going to like what we’ve got this week. Lots of big flavors and kid friendly meals. I was hard pressed to find any modifications to make them more kid friendly because they are so much already.

Ground Meat:

  • Ground Turkey and Veggie Stir Fry  – Seasoned ground turkey with pre-prepped veggies make for a FAST weeknight stir fry. Feel free to grab precooked rice if you don’t want to make it during meal prep.

  • Pineapple Turkey Sloppy Joes with Honey Mustard Slaw – Sub regular potatoes or sweet potatoes for buns if you’re grain free or paleo. Serve with your favorite salad and dressing if they don’t like slaw.

Chicken Breast:

  • Chile Verde – The perfect fall dinner. Serve with warm tortillas. All toppings are optional but make it even more substantial and delicious.

  • Chicken Popper Stuffed Potato Skins – Baked potatoes hollowed, re-stuffed with cream cheese, cheddar, jalapenos and green onions, then topped with cooked chicken, bacon and cheese before baking. Perfect for game nights!
